On the eve of February 24 the War in Ukraine began, on February 25 World Central Kitchen was on the Poland-Ukraine border serving meals to refugees fleeing war. On the 28th I joined the team on the ground operations. In the months following our operation expanded for the border region to inside Ukraine and countries where refugees started to gather and settle, my focus was on Poland. In the two months stationed in Eastern Europe I witnessed the best and worst of humanity - abandoned malls, office buildings, convention centers and the vast majority of women and children converted into temporary shelters. But I also observed extreme generosity, resilience, and solidarity by the Polish people and fellow Ukrainians. Bellow is Salo, Ukrainian cured slabs of pork backpack, was carried over the border by Chef Ayn fleeing her home a flavor fleeting. Above pictured is a meal which took place at Wysing Art Center this December in Cambridge UK.
